发酵程度的分类在说明茶叶的整体学称与各种茶的归属,而依茶菁焙火的「次数及时间」的长短来说明半发酵茶的俗称。
焙火程度──俗称
轻 火──生茶
中 火──半熟茶
重 火──熟茶
所谓的青茶类系泛指半发酵茶,所以青茶可依发酵与焙火程度的不同,而制成俗称的生茶或熟茶;也就是说同样是冻顶茶,如果发酵、焙火重些就可类似熟茶,反之,是生茶或半生茶,只是各种茶皆有其习惯制成的特殊风味罢了。
